Ask the chef: Tips for making the perfect cup of coffee

Question:

Dear chef, every time I make coffee, no matter how, it always tastes burnt. What am I doing wrong? What tips do you have for making the perfect cup of coffee? 

Answer:

“There are many reasons you could be getting burnt or bitter-tasting coffee. Steeping coffee beans for too long can certainly be a reason for burnt-tasting or bitter coffee. Water temperature is also important. Boiling water is too hot. Your water temperature should always be between 195-205 degrees for a good-tasting cup of joe. Stale coffee beans can be another reason for the burnt taste. It is always best to grind right before brewing, but still store whole beans or grinds in a vacuum-tight container. Uncleaned or unmaintained machines or equipment can be another reason. Coffee residue or build-up also can be responsible for this burnt or smoky taste. Correct grind size, proper water temperature and clean equipment are the best ways to ensure a great cup of your favorite coffee every time. Or, as always, hitting up your favorite coffee shop.”
