Palmetto Dunes Oceanfront Resort

Infusing a classic chocolate cake with the rich, robust depth of coffee, this culinary masterpiece adds a layer of complexity to a favorite. Ingredients

2 cups all-purpose flour 

4 tablespoons cocoa powder 

1 cup sugar 

1 cup mayonnaise 

1 1/2 cups coffee 

2 tablespoons vanilla 

1 heaping tablespoon baking soda

Directions

[1] Put all ingredients in a large bowl of a stand mixer and blend on medium speed until smooth. [2] Spray two small cake pans with pan coating and dust with flour. Spread batter evenly between the two pans. Bake at 300 in a convection oven or 350 in a regular oven for 20-30 minutes. [3] Let cakes cool and remove from pans. Spread with your favorite icing.
