When spring wakes the wild across the Lowcountry, our cocktails answer the call. Fresh herbs, tangy citrus and bold local spirits take over the glass, reflecting the season’s return to life, from a botanical gin shaken with rosemary and mint to a tropical rum punch layered with fruit and spice.

Burnt Church Distillery
Bright, herb-driven and built for warm-weather sipping, Burnt Church Distillery’s Spring Fever delivers the taste of Lowcountry spring in one tall glass. Devil’s Elbow Original Gin meets lemon, simple syrup and ghost bitters for a mix that’s citrusy, lightly spiced, and shaken with rosemary and mint for a fresh botanical lift. It’s crisp, lively and perfectly timed for the season.

Ingredients
  

  • 1 1/2 ounces Devil’s Elbow Original Gin
  • 1/4 ounce lemon juice
  • 1/2 ounce simple syrup
  • 1/2 ounce ghost bitters

Instructions
 

  • Combine all ingredients with rosemary and mint in a cocktail shaker.
  • Fill with ice and shake vigorously.
  • Pour into a Collins glass over fresh ice.
  • Garnish with a dehydrated lemon and a sprig of rosemary.

Punch Drunk Pirate - HHD

Punch Drunk Pirate

If spring had a rebellious side, it might taste like Hilton Head Distillery’s Punch Drunk Pirate. Created for this year’s Seafood Fest, the layered mix of dark, spiced and toasted coconut rums charges into pineapple, bright citrus and almond-rich orgeat, finished with a dash of Angostura bitters and an optional float of overproof rum for extra kick. It’s tropical, bold and built for good trouble.

Ingredients
  

  • 1 ounce HHD Extra Special Dark Rum
  • 1 ounce HHD Spiced Rum
  • 1/2 ounce HHD Toasted Coconut Rum
  • 2 ounces pineapple juice
  • 1/2 ounce lime juice
  • 1/2 ounce orange juice
  • 1 ounce orgeat almond syrup
  • 1 dash Angostura bitters
  • Splash of overproof rum optional

Instructions
 

  • Combine all ingredients in a shaker tin.
  • Add ice and shake vigorously.
  • Strain into a tiki mug or large glass filled with ice.
  • Float a splash of overproof rum on top using the back of a spoon, if desired.
  • Garnish with a mint sprig or pineapple wedge.
