Charcuterie Board Ideas with Candied Pecans and Whipped Ricotta

HOMEMADE TOUCHES TURN A CLASSIC CHARCUTERIE SPREAD INTO SOMETHING WORTH CELEBRATING

STORY + PHOTOGRAPHY BY ALEA WILKINS

For a season of get-togethers, serve a spread worth gathering around. Charcuterie boards blend all of the kitchen’s indulgences into one timeless arrangement. Cured meats, fancy cheeses, sweet honey and fig jams all find their place. The best part? The customization options are limitless. To make her spread extra special, LOCAL Life publisher Lori Goodridge-Cribb adds homemade candied pecans and a whipped ricotta dip, a reminder that personal touches make parties memorable.

Candied Pecans Recipe

Ingredients

  • 12 ounces pecans
  • 1 egg white
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt

Instructions

  • Heat oven to 300 degrees. Whisk egg white in a small mixing bowl until slightly frothy. Add pecans and whisked egg white to a large mixing bowl. Stir to evenly coat pecans.
  • Add white sugar, brown sugar, ground cinnamon and salt. Stir again until evenly coated.
  • Transfer pecans to a baking pan lined with parchment paper. Spread into a thin, even layer. Bake for 40 minutes, stirring halfway through. Let cool before serving.

Notes

The secret to evenly candied pecans is a mid-bake stir. Bake them for 20 minutes, give them a good stir to redistribute the sugary coating, then return them to the oven for another 20 minutes. Let them cool completely before adding them to the spread.

To separate the egg yolk from the whites, Lori gently passes the yolk back and forth between two split shells, allowing the whites to drip into the bowl. Cracking under the pressure? Don’t worry — a little practice makes perfect.
